
Food and beverage is the single most consequential amenity in a private club. Member satisfaction with dining tracks with overall club satisfaction roughly 1.7 times as closely as the golf course does, yet F&B is consistently one of the lowest-rated amenities in the industry. Roughly one in three members is dissatisfied with how often the menu changes. That gap is the largest unmet expectation in the private club experience, and closing it is the subject of this whitepaper.
Club Benchmarking's earlier F&B research settled the financial question: the F&B deficit is a choice, not a failure, and the clubs that subsidize dining most generously are the strongest in the industry. This paper turns to the operational work that frame implies. Drawing on more than 247,000 member survey responses and a new operational assessment validated against member food quality scores, it shows that satisfaction is decided in the kitchen, not the dining room. The four strongest drivers are preparation consistency, food quality, menu variety, and menu rotation. Service scores well across the industry; food does not.
